Cheese here is so expensive and so is the plastic cheese, why can't Thailand make their own cheese and sell it cheap? They would make a fortune.

Because their milk is not suitable for making western style cheese

Mayonnaise is Thai cheese.

I don't think it's anything to do with the milk. It's just simply there is no market for it, only in the areas where a lot foreigners live. If you get out into Real Thailand you can't even get the plastic cheese in Tesco's, Thai's don't eat it.

Bonki hit the spot! Southeast Asian Milk is inferior in fat content and other features, cream and cheeses are hard to make from it. Local mozzarella is being sold to hotels in 5 kg blocks, probably from imported ingredients.

I am no chesse expert, but couldn't SE Asia just fatten the cows up to produce the correct milk? Or do they need a certain type of cow and weather to produce it.

I'm no real expert here, but the species of cows that produce milk for decent dairy products can't handle heat well. The ones on the pastures here give enough for simple joghurts and drinkable products, so they sure beat nothing
On top of this are other issues, as milk is sensitive and prone to rot quick, if left unrefrigerated. Here, they don't refrigerate their meats and staple-foods, much less something as ordinary as milk. It would take infra-structure, but that you'll see in Cambodia much earlier, than here. Unlike Thais, they had exposure to cheese, milk and dairy-farming before the commies screwed the country up. That was due to colonialism by the Frenchies.

Milk. Since milk is raising up in the $$$, cheese costs added to make. Since it costs so abundant to make, they need to charge added if you buy it, so they can accumulate authoritative it.
